Healthy and delicious saffron zucchini with onions
If you need some lunch inspiration, why not saffron zucchini? It’s tasty, healthy and delicious. Also full of antioxidants, fibre and goodness! Stir-fried zucchini is something I used to eat a lot when I was a kid: my dad used to grow zucchini during summer and I remember our garden being full of them! We definitely harvested more than we could eat, so my mum used to cook them almost every day. These stir-fried zucchini is very similar to my mum’s recipe, I’ve just added a little twist to it by adding some saffron strands. We usually have them with some tofu or vegan sausages on the side, just delicious!
Ingredients
4 large zucchini, chopped
2 tbsp olive oil
1 red onion, minced
1/4 tsp saffron threads
1/4 cup hot water
red chilly flakes (optional)
salt

Instructions

Take half the saffron threads and put them in a spice mortar. Grind the spice with a pestle. Add the remaining threads and pour 1/4 cup of hot water into the mortar. Let the saffron soak for 5 minutes

Heat 1 tbsp of olive oil in a large pan and add the minced onion. Sauté for about 10 minutes until the onion is very soft

Add the sliced zucchini and stir fry over medium heat for 10 minutes, stirring frequently. Add a splash of water from time to time so the zucchini won’t stick to the pan

Once the zucchini are softened, pour the yellow saffron liquid evenly across. Give it a good stir and let the water evaporate

Season with salt, chilly flakes and the remaining olive oil. Enjoy!
