Quinoa summer salad
It’s that time of the year again, it’s salad time! I love salads, mostly because they are quick to make but also because they are so refreshing! I originally made this salad because I had nothing in the fridge but it turned out pretty well so I’ve decided to publish the recipe! It’s a very basic salad, no fancy dressing or ingredients, hope you’ll like it! 🙂
Ingredients
100g quinoa
100g seitan, chopped
1 cup broccoli, boiled
1 cup of corn
1 carrot, sliced
1 cup black olives
1 cup fresh basil
1 green onion, chopped
2 dates, chopped (optional)
Fresh chilly (optional)
Olive oil
Salt

Instructions

Cook the quinoa as per instruction. Set aside and let cool

Heat 1 tbsp of olive oil in a non-stick frying pan and add the chopped seitan. Season with salt and cook until crispy

In a large bowl, combine the broccoli, corn, carrots, olives, onion, basil and dates. Add 2 tbsp of olive oil and mix until well combined

Add the cool quinoa and seitan to the serving bowl and toss. Season with more olive oil – to taste – and more salt if necessary. If you like it spicy, you can add some chopped fresh chilly as well!

Let the salad rest in the fridge for 10 minutes and serve
