Tofu and watermelon salad with fresh basil
This quick and juicy watermelon salad will keep you fresh and full during the summer months and it’s the perfect dish to bring on a picnic! It’s quick to make – it literally takes 15 minutes – and it’s also fresh, delicious and nutritious! We’ve used fermented tofu here as we love its natural taste but you can add any tofu you like. Please note that the salad won’t taste the same if you use regular tofu though. Enjoy! 🙂
Ingredients
2 cups watermelon
100g fermented tofu
1 tbsp extra-virgin olive oil
Fresh basil leaves
A pinch of salt
Black pepper

Instructions

Cut the watermelon and the tofu into bite-size pieces

Put in a large plate and add olive oil, basil leaves, salt and black pepper. Mix well and serve immediately
